I've had people ask me lately about ideas on how to get more veggies at breakfast. I love making an omelet and stuffing it with spinach, peppers, mushrooms, and cheese. But if you know me, I am always looking for ways to get creative in the kitchen to keep it interesting.
Soooo.. Today I went with a breakfast salad. AND WHOAH was good! It's super fun to get a full serving or two of veg right in the am. (E liked it too and appreciated the change up from oats).
Other veggie for breakfast ideas
1. Green Smoothies
2. Omelets
3. Mini Quiches or Spinach and Carrot Quiches
4. Fritatas
5. Breakfast Strata
6. Pumpkin Pancakes
7. Zucchini Bread or Carrot Loaf
8. Avocado spread, layer toast with egg, and tomato!
9. Bean Breakfast Burrito
10. Leftover pizza... loaded with veg (of course)
Warm Breakfast Salad for Two
2 cups lettuce (I used red leaf)
1 sweet potato, diced
1 apple, diced (I used gala)
2 pieces turkey or canadian bacon, crispy and crumbled
Fresh basil, chopped
2 eggs, lightly fried or poached
Balsamic vinegar, if desired
Heat cast iron skillet over medium heat to cook bacon until crispy. Remove bacon from pan and place on paper towels to remove some grease. Turn up temp to medium high heat, and place the sweet potatoes and apples in the warm skillet and cook until a little brown. (If you have a microwave, zap the potato until it's a little tender. If you are like me and don't have a mic., place your potato in the skillet with some water, cover with a lid and steam away... add the apples after potato is soft).
Layer salad- Lettuce, basil, sweet potato hash, crumbled bacon, top with egg, and drizzle with balsamic vin if desired.
Latte to drink.. YUMMY!
This meal was so satisfying....when my plate is balanced with all the food groups ( Protein + Carbs + Fruit/Veg + Dariy) it makes my body feel better!

ReplyDeleteOh my goodness. Your recipe is so colorful, and it looks amazing. I'm laughing out loud just thinking about what my boys would think if I served them an egg-topped salad for breakfast! They love all the ingredients in your salad, but I wonder how they'd react if it landed on the breakfast table. I think I'll try! I know my husband would love it :)
