Fig Power Balls


I was bit by the bug, again.


Six weeks ago I began triathlon training. It's been two years since my last race (April 2010). I took a little hiatus after I got married, not because I didn't enjoy triathlon, but simply out of convenience. I didn't have easy access to a pool. Went on a few group rides, but never really started exploring the roads in Orlando. Shortly after we got married, we joined a running group and began training for our first marathon, and continued with marathoning and did another this past year.


Then I got bit. I was down at the Y clocking in for a consult and ran into the coach of the tri-club. As we got to talking he asked... "so when do you workout?" Which is quite a funny question. I thought to myself..."Oh uuhhhh".. "I'm coming off marathon season, the holidays, no excuse... the truth is I've been consistently inconsistent. I hadn't really picked back up the mileage or workouts, and found myself stretched and tired by the end of the day.


God has been calling me to surrender my time to find space, and He has opened up doors that allow me to have more freedom to do the things I love. It is beautiful.

So I joined the team. Workouts are at 5:00, yes in the morning, which means a 4:40 alarm clock. Whoa Nelly. This was the commitment.


Before workouts I have been digging these homemade Lara Bars Balls. I keep my pantry stocked with these goodies. They are perfect to eat in the wee hours of the morning. Light on the stomach, while remaining high in complex carbs and sustaining proteins. Nom, nom, nom.

Fig Power Balls
makes 15 balls


1 1/4 cup pecan halves, raw
8 oz bag dried figs, destemmed (about 1 1/4 cup)
1/4 cup flaked coconut, unsweetened


Chop nuts in food processor; then add figs and coconut and process until blended. Form mixture into 12-15 balls and roll in coconut or crushed pecans.
