Meal Plan Sunday

It's been a workin' weekend. Eric is of course studying like a mad man, and listening to classical music, loudly, and I've been running around, writing, laundry, gifting, traveling, church, shopping, among other things.

 Friday night my bros DJ and Ondrej came over and hung out with me.

We hit up a local favorite, Prato on Park Ave, and then walked down to The Wine Room for drinks and good conversation. We ended the night at Yogurtland, only the best fro-yo.

Ummm... clearly amazing caesar salad, so light and lemony! Must get at Prato. 

We got an assortment of fresh and unique pizzas straight out of the brick oven. 

I'm headed back to my parents house tomorrow for Memorial Day celebrations. Dad will be grilling and mom has some yummy baking planned. I'm going to go... enjoy.

I sat down this afternoon to look at the week ahead, plan our meals, and hit the grocery store. Here's what's on the menu this week.

Monday: Memorial Day BBQ + Grilled Veggies
Tuesday: Eggplant Lasagna
Wednesday: Chicken Vegetable Stir Fry
Thursday: Salad with Grilled Tilapia and Avocado Dressing
Friday: Soup + Sandwiches
Saturday: Leftovers
