I prepped this salad over the weekend for a mid-week quick dinner. I called Eric as I was coming home from work, and asked him if he could make the wraps since I had to eat and run.
But guess what!? He staged the photos too. Cracks me up. I guess he's getting use to this food blogging thing.
This salad is excellent for summer lunches or dinner, when it's too hot to heat up the kitchen. Rotisserie chicken is my protein go to for to no-cook meals.
Waldorf Chicken Wrap
Makes 3-4 wraps
2 lb rotisserie chicken, deboned, and shredded
juice 1 lemon
1 T orange juice
3 T mayo
1/2 gala apple, diced
1/4 cup dried plums, diced
1 T green onions
1 cup arugula
4 wheat tortillas
Mix chicken with mayo, oj, and lemon juice with fork until incorporated. Stir in apples, plums and onions. Wrap chicken salad mixture topped with arugula into wheat tortilla. Enjoy.
