Quinoa Taco Salad

As I was eating dinner last night, I realized I’ve eaten a Mexican-style salad my last three meals aside from the pancakes I had for breakfast. Mexican food is just so good and comforting. And it’s really simple after a long day, especially on a weeknight. 

From the recipes on this blog you know I love to cook, bake, and eat healthy most of the time. But let’s be honest and real, I don’t have the time to be in kitchen cooking and cleaning every night of the week. 
For the most part, Eric and I are night time exercisers. Sometimes we will get in a morning sweat sesh, but more often then not we workout at night, which means dinner needs to be fast! Quick and simple food is a must, this Quinoa Taco Salad fills that need and has a wonderful flavor. Love those mangos!

Quinoa Taco Salad

Serves: 1
  • 2 cups chopped romaine lettuce
  • ¼ cup cooked quinoa
  • ¼ cup black beans
  • ¼ cup chopped mango
  • 1 plum tomato, diced
  • 10 blue corn chips, crushed
  • ½ small California avocado, diced
  • 2 tablespoons fresh salsa
  1. In serving bowl, layer romaine lettuce and top with quinoa, beans, mango, tomato, chips, avocado, and salsa.

    We do quinoa taco lettuce wraps or salads for quick dinners or weekend lunches almost weekly. Next time I am adding in some mango, love that idea!

      Seriously glad to hear that you do tacos weekly! I love to mix it up with our meals so I'm not the only one that likes the consistency of Mexican food.

    I've been so excited about quinoa lately! So easy and delicious, and I'm always looking for easy extra protein. I'm going to have to try this one soon!

    I love using quinoa as a bed for my taco meat! After steaming the quinoa, I like to add cumin, chili powder, turmeric, garlic, smoked paprika, and whatever else catches my eye for the added healing benefits of herbs and spices. The leftovers are also awesome under a runny egg for breakfast!

    This salad was a total win. It was very colorful like eye candy, had a very fresh taste, great textures, and it was super easy to make. I just prepped the veggies/fruit while the quinoa cooked, and the plates were ready and waiting for the quinoa when it finished 15mins later. Thanks for a great recipe. I'll be returning to it over and over! (My 10 year old daughter loved it too!)
