I mean this salad really is a looker… just look at all those beautiful colors. I think it would be pretty served at a girlie luncheon. I’m not trying to leave the men out, it could be a sexy dude salad too—it is high protein, Paleo and gluten-free and all.
These Tart Cherry Tuna Salad Avocado Bowls have THE BEST FLAVOR— the avocado creates this creamy texture that blends perfectly with the salty albacore tuna and I’m all into the sweet crunch from the pecans and the bright tartness from the Montmorency tart cherries.
I’ve been known to sneak a couple extra tart cherries from the bag to toss at the bottom of this salad because I HAVE TO HAVE tart cherries in every mouthful, especially the last bite. There must be a tart cherry in the last bite. It’s like a rule.
This salad only takes a couple seconds to toss it all together, and it’s super filling, which is likely why it ranks so high up on my lunch list.
- ½ small avocado, diced
- 4 ounces albacore tuna canned in oil
- 1 heaping tablespoon dried Montmorency tart cherries
- 1 tablespoon chopped pecans
- pepper to taste
- Mix all ingredients in a small bowl until combined.
- Serve salad in avocado bowl.
