Leeks. Have you tried ’em?
They taste like a garlicky onion.
And they are pretty dirty. Really dirty. Before you cut them up, you have to make sure to wash in between each individual strand. I like this about the leeks. Isn’t it amazing how plants can be so unique?
Leeks make a great addition to stir fry. They are hardy and have a good crunchy texture cooked this way.
Leek-y Stir Fry
1 leek, chopped
1 bell pepper, small dice
1 cup black beans
1 cup soy crumbles, I used Boca brand
dash of cayenne and cinnamon to taste
crumbled feta for topping
Heat oil in cast iron skillet. Wash and dice leeks and bell pepper, and saute over medium high heat. Add beans, soy crumbles, and spices. Preheat oven to 400 degrees, and place Naan bread on oven rack for about 3 minutes until warm and slightly crisp. Serve stir fry topped with feta cheese with side of Naan bread.
