Southern Cheddar Corn Muffins

Ingredients

  • 1 cup gluten free flour
  • 1 cup corn meal
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 tablespoon honey
  • 1/4 cup coconut oil
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon minced garlic
  • 4 slices cooked center cut bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup corn

Instructions

  1. Preheat oven to 350 degrees F, and prepare 12 cup muffin tin with cooking spray.
  2. In large bowl, whisk together flour, corn meal, baking powder, baking soda, and sea salt.
  3. In separate bowl, whisk together honey, coconut oil, egg, buttermilk, and garlic.
  4. Pour wet ingredients into dry ingredients and stir just until combined.
  5. Fold in bacon, cheddar and corn.
  6. Spoon batter into muffin cups.
  7. Bake 15-18 minutes until toothpick inserted in center is clean.
  8. Cool for 5 minutes on wire rack.
