Broccoli and Cheese Soup


This Broccoli and Cheese Soup is perfect on a cold day, or when you just want something soothing and warm. It uses Greek yogurt and fresh broccili and because it heats up in the blender, you’ll save yourself time (and dishes)!



  • 4 cups fresh broccoli florets, steamed and divided
  • 1 shallot
  • 1 garlic clove
  • 6 ounces (1 1/2 cup) shredded cheddar cheese
  • 1/2 cup 2% plain Greek yogurt
  • 2 tablespoons corn starch
  • 3 cups vegetable broth
  • 1/4 teaspoon ground clove


  1. Place 2 cups broccoli, shallot, garlic, cheddar, yogurt, corn starch, vegetable broth, and clove in a high powered blender and blend until smooth and heated.
  2. Chop remaining two cups of broccoli into bite sized pieces; stir soup mixture. Serve hot and with a side of crispy baguette.
  3. Top soup with shredded cheese and broccoli florets if desired.
