Ingredients

  • For Pancakes:
  • 2 cups sifted all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs, slightly beaten
  • 2 cups eggnog
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon nutmeg
  • For Topping:
  • 1/2 cup heavy whipping cream
  • 1/4 cup eggnog
  • 1/8 teaspoon nutmeg
  • cinnamon, for dusting

Instructions

  1. For Pancakes:
  2. Sift flour, and measure out 2 cups of sifted flour and place in a large bowl.
  3. Whisk baking soda and salt into flour.
  4. In a separate bowl, whisk together eggs, eggnog, vanilla extract, and nutmeg.
  5. Pour wet ingredients into dry ingredients and stir just until combined.
  6. Ladle ΒΌ cup of batter per pancake onto hot lightly greased griddle.
  7. Cook pancake until it bubbles on one side, and flip.
  8. Cook until browned on other side.
  9. To freeze leftover pancakes, line baking sheet with parchment paper and place on sheet individually and place in freezer until slightly frozen and transfer to freeze safe ziploc bag.
  10. For Topping:
  11. Combine cream, eggnog and nutmeg in mixing bowl and whip together until soft peaks form. Add dollop of eggnog whipped cream and a dusting of cinnamon to top of pancakes for a festive and tasty flare.
