Ingredients

  • 4 over-rippened bananas, smashed
  • 2 eggs
  • 1/2 cup creamy almond butter
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon almond extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup all purpose gluten free flour
  • 3/4 cup almond flour
  • 1/2 cup unsweetened vanilla almond milk
  • 1/4 cup semi sweet chocolate chips
  • 1/4 cup walnut halves, chopped

Instructions

  1. Preheat oven to 350 degrees F. Line 12 count muffin tin with foil liners.
  2. In large bowl, whisk together bananas, eggs, almond butter, maple syrup, and almond extract.
  3. Stir in baking soda and salt.
  4. Stir in flours alternating with the milk until fully combined.
  5. Fold in chocolate chips and chopped walnuts.
  6. Spoon batter into muffin tins and bake for 15 minutes.
