Description

Instant Pot Crack Chicken and Broccoli Recipe stuffed in a juicy sweet potato! For low carb, serve it on its own or eat it over a bed of greens.


Ingredients

  • 2 pounds chicken breast
  • 4 ounces cream cheese
  • 1 packet ranch dressing
  • 1/2 cup shredded cheddar cheese
  • 4 cups broccoli florets, chopped small
  • 8 sweet potatoes 🍠
  • 8 strips of center-cut bacon, chopped

Instructions

  1. In instant pot or slow cooker, add chicken, cream cheese, and ranch seasonings. Secure lid and cook for 6-8 hours in slow cooker or in IP on poultry setting for 12 minutes, until chicken is fully cooked.
  2. Shred chicken and stir in cheese and broccoli.
  3. Meanwhile microwave sweet potatoes for 5-8 minutes; stuff sweet potatoes w chicken mixture and enjoy.
