Root Beer Pulled Pork with Peach Slaw

Ingredients

  • For Root Beer Pulled Pork
  • 1 boneless pork loin roast (23 lb)
  • salt and freshly ground pepper
  • 1 tablespoon minced garlic
  • 1 tablespoon sriracha hot sauce
  • 1 medium yellow onion, thinly sliced
  • 12 ounces root beer
  • mini sandwich buns
  • For BBQ Sauce
  • 1/4 cup ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons root beer
  • 1 tablespoon honey
  • 1 tablespoon worcestershire sauce
  • For Peach Slaw
  • 2 peaches, sliced
  • 2 cups finely shredded cabbage
  • 2 tablespoons mayo
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey

Instructions

  1. Season pork roast with salt and pepper and rub garlic into meat. Place pork in slow cooker and top with hot sauce and onions.
  2. Pour root beer over pork, reserving 2 tablespoons for BBQ sauce. Cook on low heat for 7-8 hours.
  3. Meanwhile, make BBQ sauce by whisking together ketchup, mustard, root beer, honey, and worcestershire sauce. Set aside.
  4. Just before eating, prepare slaw by tossing together peaches, cabbage, mayo, honey, and apple cider vinegar. Season with salt and pepper to taste.
  5. When pork has finished cooking, remove meat and onions from crockpot. Shred pork and mix in onions and BBQ sauce to coat.
