Soft Baked Almond Butter Banana Oat Bars

Ingredients

  • 1/4 cup coconut oil, softened or melted
  • 3/4 cup natural almond butter
  • 1/4 cup ground flaxseed
  • 2 ripe bananas, smashed
  • 1/4 cup maple syrup
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cup old fashioned oats
  • 1/4 cup semi sweet chocolate chips (vegan if need dairy free)

Instructions

  1. Preheat oven to 350 degrees F. Coat 8 inch square pan with small amount of coconut oil or cooking spray.
  2. In large bowl, mix together coconut oil, almond butter, flaxseed, banana, and maple syrup.
  3. Stir in baking powder, salt, and oats.
  4. Pour batter into pan and spread evenly.
  5. Top with chocolate chips.
  6. Bake for 25 minutes and allow to cool for 45 minutes before slicing. Slice into 16 bars.
