Strawberry Coconut Ice Cream

This Strawberry Coconut Ice Cream is so decadent and lusciously creamy! Grab a bowl of this vegan ice cream made with less refined sugar thanks to the sweetness of fresh strawberries and bananas.



  • 1 pint {16 ounces} fresh strawberries, hulled
  • 2 over-rippened bananas
  • 1 can coconut cream (i use Trader Joes… this is different from coconut milk, it’s 100% cream)
  • 1/2 cup fine grain coconut sugar (or regular granulated sugar if you wish)
  • 1 vanilla bean
  • 1 teaspoon vanilla extract


  1. Place strawberries, bananas, coconut cream, and sugar in a blender. Scrape seeds out of vanilla bean, and add to blender along with vanilla extract.
  2. Process until smooth.
  3. Pour ice cream mixture into ice cream maker and churn until soft serve consistency forms.
  4. Enjoy as soft serve or transfer to storage container to continue freezing.
  5. Just before serving, allow to sit at room temperature for 5-10 minutes to soften.
