Chicken Fried Rice with Sweet Chili Sauce

Ingredients

  • 1 tablespoon sesame oil
  • 3 eggs
  • 1/2 onion, diced
  • 1/2 red pepper, diced
  • 1 teaspoon minced garlic
  • 3 tablespoons low sodium soy sauce
  • 1/4 teaspoon ground star anise
  • 1/4 teaspoon ground ginger
  • 1 cup sliced mushrooms
  • 1 cup matchstick carrots
  • 1 cup green peas
  • 1/2 cup green onion
  • 2 cups precooked jasmine rice
  • 1 cup precooked shredded chicken
  • 2 cups steamed broccoli
  • 2 cups bean sprouts
  • FOR SWEET CHILI SAUCE
  • 1/4 cup orange marmalade
  • 1 teaspoon sriracha
  • dash of red pepper flakes
  • 1 teaspoon soy sauce

Instructions

  1. Prep all ingredients before beginning to cook as fried rice cooks fast.
  2. Heat oil in wok over medium high heat.
  3. Scramble egg until begins to cook through.
  4. Add onion, red pepper, and garlic and sauté until onion becomes translucent, about 4 minutes.
  5. Add soy sauce and spices to wok and scrape sides of wok to pick up any remaining bits from pan.
  6. Toss in mushrooms and carrots and sauté until they begin to become tender, about 3-4 minutes.
  7. Mix in peas, green onion, rice, and chicken until incorporated and cook until rice is heated through.
  8. Gently stir in broccoli and bean sprouts.
  9. Serve immediately with drizzle of sweet chili sauce.
  10. For SWEET CHILI SAUCE, whisk all ingredients together in small bowl until combined and smooth.
