Description

PBJ Coconut Milk Chia Pudding. Vegan chia seed pudding made with coconut milk, peanut powder, raspberries, and chia seeds.

Ingredients

  • 3 tablespoon chia seeds
  • 1 teaspoon maple syrup
  • 1 teaspoon vanilla extract
  • 3 tablespoon peanut powder
  • 1 cup unsweetened coconut milk beverage (NOT canned coconut milk)
  • 1/2 cup frozen raspberries

Instructions

  1. In a jar with a lid (or two separate jars), add chia seeds, maple syrup, vanilla extract, peanut powder and coconut milk.
  2. Secure lid on jar(s); and shake until fully mixed.
  3. Refrigerate for 4 hours, or overnight.
  4. Top each with raspberries, peanut butter, and/or peanuts (optional).
