Ingredients

  • 1 large onion, diced
  • 8 ounces mushrooms, quartered
  • 2 large potatoes, small dice
  • 1 head broccoli, cut into florets
  • 8 ounces center cut bacon
  • 1 cup cherry tomatoes, diced
  • 2 avocados, sliced (when ready to eat)
  • 8 soft boiled eggs
  • freshly ground pepper
  • Italian seasoning

Instructions

  1. Preheat oven to 400 degrees F; line two baking sheets with parchment paper.
  2. Arrange onions,  mushrooms, potatoes, broccoli, and bacon evenly among pans and season with pepper and Italian seasoning.
  3. Place both pans side by side in oven and bake for 40 minutes, stirring veggies half way through baking to ensure even cooking.
  4. Enjoy veggies and bacon in a bowl topped with soft boiled eggs, avocado and tomatoes.
