Ingredients

  • 3 large bananas, mashed
  • 2 large eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1/2 cup natural almond butter
  • 1/4 cup unsweetened vanilla almond milk
  • 1 teaspoon vanilla extract
  • 1 cup certified gluten free oat flour
  • 1/2 cup coconut flour
  • 2 tablespoons ground flaxseed
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking powder
  • 1/2 cup semi sweet chocolate chips
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 375 and line 2- 12 count muffin tin with foil liners.
  2. In a large bowl, whisk together bananas, eggs, coconut oil, honey, almond butter.
  3. Stir in almond milk and vanilla extract.
  4. Fold in oat flour, coconut flour, and ground flaxseed until combined.
  5. Stir in baking soda, salt, and baking powder.
  6. Fold in chocolate chips and pecans.
  7. Spoon batter into muffin cups and bake for 20 minutes or until toothpick inserted in the center comes out clean.
