Ingredients

  • spinach, 1 package defrosted and squeeze
  • 2 T fresh salsa
  • 1/4 cup chopped onions
  • 1/4 cup shredded carrots
  • 1/4 cup plain yogurt
  • 1/2 cup colby jack cheese
  • 4 eggs
  • freshly ground pepper

Instructions

  1. Preheat oven to 325 degrees F
  2. Coat a quiche pan with cooking spray
  3. Mix all ingredients together and pour into prepared quiche pan
  4. Bake for 35 minutes
