Baked Tostadas

behold the tostada. holy deliciousness!

baked corn tortillas. these are new to us.

crispy and crunchy and the best holder of Mexican goodness, quite literally.


so here’s to a new take on our weekly taco habit. y’all with me?

Baked Tostadas
4 servings

8 corn tortillas, small round
1 yellow onion, diced
1 green bell pepper, diced
1 lb ground beef
3 T taco seasoning
1 cup frozen corn
1 cup cheddar cheese
2 cups lettuce, topping
salsa, topping

Preheat oven to 425 degrees. Place tortillas on baking sheet and bake 12-15 minutes or until golden brown; flipping halfway through.

Heat small amount of oil in skillet; saute onions and peppers just until translucent. Add ground beef and cook until browned. Add taco seasoning and 1/4 cup water, and stir until incorporated and liquid reduces. Add frozen corn and cook until warmed.

Serve tostada topped with beef mixture, cheese, lettuce, and salsa. Enjoy!

    They are baked, they are healthy…I would love to try this recipe. I love the mix of colors too…Really perfect for summer.
