{Fast Feasts} 60 Second Egg Sandwich

By Kristina LaRue, RDN 10 Comments

Who doesn’t love eggs for breakfast?
This is the fastest way I know to have a hot egg breakfast. 60 seconds and you’re done. I could seriously eat it everyday, and maybe I have, so what.
Now that we have room for a microwave in our new house I’m getting a fresh taste of convenience. Seriously, the microwave was one thing I took for granted. I lived without one for 2.5 years, and quickly learned how it is pretty much a modern kitchen essential.
60 second Egg Sandwich
makes 1 serving
INGREDIENTS
1 egg
sprinkle of cheddar cheese
1 sourdough English muffin, toasted
butter and jelly
1 coffee mug
DIRECTIONS
Spray coffee mug with cooking spray, add egg and whisk until yolk is incorporated. Top with a sprinkle of cheese. Cover with paper towel and microwave on high for 60 seconds.

Scoop egg out of mug and sandwich between buttered and jellied English muffin. If you’re traveling with this sandwich, wrap it in tin foil or parchment paper and bring a napkin along.
Hope you enjoy Love & Zest blog series {Fast Feasts} helping you get tasty and healthy food on the table fast. Do you have a favorite meal that you’d like to be on the table faster? Leave me a comment and you may see it in a future blog post.

Sandwich with egg are the best combination but I haven't try to microwave the egg. Must try this fresh taste for perfect breakfast. Thanks for sharing dear.

    Yay for easy breakfasts!
This is one of my favorites but I hardly make it cause I am short on time. Now I have no excuses. 🙂
And congrats on your blogiversary! Sorry I have been MIA. I have been having serious computer issues lately. I had to sneak to my parents house today to comment on blogs.
