It’s been a while, but I’m glad to back. After attending Blog Brûlée, I realized how much I missed being a part of The Recipe Redux. I went through a funk with the blog and wasn’t being consistent with blogging and posting my monthly recipe posts with the group that I had to step down. That little separation lasted too long IMO, but let’s put the past behind us, eh?

Every month on the 22nd, I’ll be teaming up with the Recipe Redux and posting a recipe based on the theme/challenge of the month. This month theme is “Spooky Spices” aka that spice that’s sitting back in the spice cabinet that you don’t know what to do with.

I chose to use turmeric {and ginger}. While I add turmeric to savory dishes like rice and stew, I’ve never added it to a traditionally sweet recipe. So enter my favorite granola recipe. I tweaked the base of this recipe to include some of my fall favorites— maple, pecans, and hazelnuts and cut out A LOT of the sugar, which I’m sure you’ll appreciate. The turmeric adds a gorgeous golden yellow hue to the granola and ginger takes this savory granola up a notch! I’m in love.

Description

This Maple Pecan & Ginger Granola is savory and sweet with the perfect blend of fall flavors–maple, pecans, & cranberries. It’s yummy topped on Greek yogurt and oatmeal!

Ingredients

  • 1 cup pecan halves, chopped
  • 1 cup hazelnuts, chopped
  • 1/4 cup pumpkin seeds
  • 1/4 cup golden flaxseed
  • 1 cup oats
  • 1/2 cup dried cranberries
  • 1/2 cup dried unsweetened coconut flakes
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ginger
  • 1/2 cup natural peanut butter
  • 2 tablespoons 100% pure maple syrup
  • 1 tablespoon coconut oil

Instructions

  1. Preheat oven to 300 degrees F.
  2. Line baking sheet with parchment paper.
  3. Spread granola evenly on baking sheet, covering about 3/4 of sheet pan.
  4. Bake for 20 minutes; allow to cool completely before transferring to an airtight container.

  • Fiber: 4g
