Salted Caramel and Dark Chocolate Popcorn

“I belong with you, you belong with me. You’re my sweetheart.” 

When I hear these lyrics they immediately make me smile, I start to dance, and dream about my sweetheart. I get super giddy and it doesn’t wear off quickly. 

Tonight on Valentine’s day we are planning to have a picnic date. Leu Gardens is playing an outdoor movie, “The Vow”, and we are going!
I’m imagining a relaxing night, laying on a blanket in the fields and spending sweet time with Eric.

The Menu
Millet Salad with Arugula, Lemon, and Dried Cranberries
Turkey and Swiss Chard Pinwheels
Fresh Fruit Cubes
Salted Caramel and Dark Chocolate Popcorn


Salted Caramel and Dark Chocolate Popcorn
serves 2-3 
1 bag microwavable popcorn, low sodium
10 caramel chews
1 tsp water
4 squares dark baker’s chocolate
pinch of kosher salt
sprinkles
Pop popcorn according to package directions. Line a baking sheet with parchment paper. Arrange popcorn on baking sheet, making sure to remove any kernels. 
In microwave safe bowl, place caramel and water and heat for 1 minute. Drizzle on popcorn.
In separate microwave safe bowl, place chocolate and warm for 1 minute and stir until melted. Drizzle on popcorn.
Immediately sprinkle with kosher salt and sprinkles. Store in an airtight container.
