Spring has sprung! Can you believe it’s the first day of spring? My goals for this weekend are to replant in my garden and get my Easter decorations up, and I’m going to savor every minute of it. We also have a 17 miler planned. I’ll let you know how that goes on Monday.

To celebrate this week of green, I’m sharing a green juice that I developed and photographed for Fitness Magazine. Scroll to the first page of the article and you can see my quotes as well. While it’s not technically a juice because I used a blender to make it, it has juice consistency and a great dose of protein!

Tart Apple, Cucumber & Mint Refresher

Ingredients

  • ¼ cup peeled and chopped cucumber
  • ½ cup non fat plain Greek yogurt
  • ½ lime, juiced
  • ¼ cup fresh baby spinach
  • 1 small green apple, cored and sliced
  • ½ teaspoon fresh mint
  • ¼ cup unsweetened coconut water
  • 2 cups ice

Instructions

  1. Pour all ingredients in a high-powered blender, and process until completely smooth. Serve immediately.

  • Trans Fat: 0
  • Carbohydrates: 31g

    This sounds so refreshing and delicious! I'm hoping to start making garden plans soon, but it's too cold to start anything outdoors here yet.

      I should have written 100% pure coconut water… unsweetened meaning ones without fruit purees (mango, pineapple)

    Oh that's pretty awesome that you got to develop a recipe for Fitness magazine! They are one of the magazines I currently subscribe too. This looks great – perfect for a quick breakfast. I imagine the flavors alone would give you the feeling of a boost of energy, which is often needed in the morning. 🙂
