Chicken Parmesan with Spaghetti Squash

This Baked Chicken Parmesan is so moist, flavorful, and healthy. With minimal ingredients it’s easy to prepare in a hurry on a weeknight. Serve with spaghetti squash that you can make in the microwave! 

Healthy Chicken Parmesean

I love when a weekend is both restful and productive. It makes Monday so much easier! I find that staying on top of my meal prep makes a big difference — I don’t have to worry about what I’m having for lunch or dinner, and I don’t get stuck grabbing meals out of the house. #notgoodonthebudget

Plus, having things on hand helps the whole family from feel famished and cranky.

Chicken Parmesan with Spaghetti Squash

A quick tip:

I usually buy full size chicken breasts to make chicken parm and slice them to get them to the right size for baking, but if you find chicken breast cutlets that are already thin enough, it takes out one of the steps of prep. You want them to be a bit on the thin side so they cook quick and evenly.

Description

This Baked Chicken Parmesan is so moist, flavorful, and healthy. With minimal ingredients it’s easy to prepare in a hurry on a weeknight. Serve with spaghetti squash that you can make in the microwave!

Ingredients

  • 1 teaspoon olive oil
  • 1 pound chicken breast cutlets {4- 4 ounce pieces}
  • 1/3 cup Italian breadcrumbs
  • 1/3 cup shredded parmesan cheese
  • 1 egg
  • pinch of salt and freshly ground pepper
  • 1/2 cup tomato sauce
  • 1/2 cup part skim mozzarella
  • 1 small spaghetti squash

Instructions

  1. To prepare chicken parm:
  2. Preheat oven to 425 degrees F.
  3. Drizzle 9X13 inch baking dish with olive oil.
  4. In shallow dish, combine breadcrumbs and parmesan cheese.
  5. In small bowl, whisk egg and season with salt and pepper.
  6. Coat each chicken breast in egg wash and smother in parmesan breadcrumbs.
  7. Place chicken in prepared baking dish and lightly mist or drizzle tops of chicken with olive oil
  8. Bake chicken for 12 minutes; remove from oven.
  9. Turn oven temperature to broil.
  10. Pour tomato sauce around sides of chicken and sprinkle chicken with mozzarella.
  11. Place chicken back in oven for 3 minutes.
  12. To prepare spaghetti squash:
  13. Pearce holes in spaghetti squash with a fork.
  14. Place spaghetti squash in a microwave safe bowl, and cook on high in microwave for 10 minutes.
  15. Allow squash to cool, and slice in half from stem to end.
  16. Using a fork, scrape inside of squash from stem to end and gather the spaghetti-like strands in a bowl. Season with salt and pepper.
  17. Serve immediately.

    Made this last night! SO GOOD. And carb consious. I may or may not have added a bit more cheese to the equation, but I think it was still pretty healthy 🙂

    I love the recipe! I have one question. The ingredients list calls for mozzarella, but I didn’t see it used in the directions. Can’t wait to make it!
