Beach & Birthdays

It was a weekend of birthdays. We spent the weekend in Indian Rocks Beach at Eric’s family beach house for Eric’s dad’s birthday. We headed out on Friday evening, it’s about 2.5 hours from Orlando. We got there just in time to go to bed. And woke up early enough for a cool morning on the beach with coffee and good reads. We loved the time with family and unwinding at the beach. Despite living in FL we don’t make it to the beach very often.

My mom, dad, and brother DJ got back from Honduras Friday afternoon. They went on a dental mission trip that my parents put together with their church.

My dad did the dental work, mom assisted and sterilized equipment, and DJ was an interpreter and he even got to translate a church service {Spanish to English}. They played soccer with the kids and I cannot get over my dad’s mad dive here…

They loved Honduras and are planning to make it a yearly trip. We celebrated mom’s birthday on Sunday afternoon at their house.

Meal prep is tough with travel because I prep on Sunday, which then turns into a week of eating out. Not this week, y’all. I made it a priority get to the grocery store on Sunday evening. I put together some simple meals that I’ll prep the night of, and I don’t have “too much” scheduled in the evenings this week so it should be manageable.

Here’s the menu:

  • MONDAY: Cheesy Meat Loaf Minis from Cooking Light with Garden Salad and Potatoes
  • TUESDAY: Cobb Salad…(best salad ever according to Eric and recipe coming this week)
  • WEDNESDAY: Jambalaya
  • THURSDAY: BLT with White Bean Soup
  • FRIDAY: Chicken Fried Rice from TJ’s

    Awesome photos from you family of Honduras…what a beautiful country. Your beach time sounds SO lovely. I don’t take the time to turn off and step away from social media. I really need to take that time. It’s SO important. Thanks for sharing!

      Yes, I can’t say I was completely turned off from social media during the trip but it was nice to get to a different environment and relax more than usual. It’s so important for me to do too.

    Looks like it was an amazing weekend! I can’t wait till summer here in NZ and I can spend some quality time at the beach! Your meals all sound amazing! I don’t have any tips sorry! I am super lazy when it comes to planning and cooking so kind of just throw together whatever random things I have on hand. Sometimes it is a hit but sometimes it is a total miss! Like yesterday when I decided to add beans to my morning smoothie to boost the protein content… FYI don’t! It was bad! I think I am going to try and create some more proper dishes this week though so I am guaranteed to have at least a few tasty meals. Plus I think it will be nice to feel as though I have made an effort and have something that is a bit different at the end of it all. Maybe I will get super crazy and actually turn on the oven!

        Well I have seen Chocolate Covered Katie do a cookie dough dip (or something like that) using beans so I thought it might be similar to that but apparently not! I had spinach in there as well and the combination of the two gave it the weirdest texture ever! Apparently just because the professionals can pull something off doesn’t mean I can. Who would have thought? =)

    Had to write and let you know I tried the pasta bake for my house of MEN. Been trying to work kale into the diet and they catch me every time! This was a last ditch effort, and it worked! Everyone loved the dish and the chicken sausage was a nice find. I doubled the recipe so have one dish frozen for an evening meal this week. Glad to find your blog!
