This Baked Chicken Parmesan is so moist, flavorful, and healthy. With minimal ingredients it's easy to prepare in a hurry on a weeknight. Serve with spaghetti squash that you can make in the microwave!  I love when a weekend is both restful and productive. It makes Monday so much easier! Last Saturday after Miracle Miles, Eric and I raced to our hometown to attend a baby shower for one of our sweet friends, and attended my grandma's 80th birthday party! I started running in college and fell in love, which lead me to the triathlon team. Running was a place of stillness and escape for me. Being so rigid with tennis in high school, I wanted freedom. And running gave that to me. When Eric and I met, he really didn't like to run. We started running together even though he complained a bunch in the beginning. I made back to Orlando late last night from Blog Brûlée, an RD food blogger retreat in Vermont. Connecting with old friends and meeting new ones that inspire me really builds me up.
