Banana Date Bread

By Kristina LaRue, RDN 2 Comments

I have been studying my days away lately, and like most students, I have found some ways to procrastinate. I was reading one of my favorite blogs, Bella Eats, and she had a really great recipe for banana date bread. I have a few bags of dates in the pantry, thanks to my sweet friend, Tara Gidus, and have been looking for just the right recipe to use them. I love the smell of cinnamon and banana baking in the oven and the wholesome ingredients in the recipe, but I was a little skeptical that the bread would be dry since it didn't have any butter or oil and was made with whole wheat flour. But boy was I wrong, this loaf is really moist! The dates, apples, and bananas give the bread the perfect texture and softness and provide natural sweetness.  Eric gobbled up a few warm ... It has been a while since I have posted. I have been going through many changes--it is just that phase of life that I am in. I will keep you posted. In the midst of all of these exciting new ventures, we have still of course been feeding ourselves--I intentionally document all the kitchen creations, but despite the best of intentions I have not been blogging about them. Here is a recipe I know you will enjoy--especially if you are like me and love Mexican food! Fajitas are weeknight must have..super simple and quick to prepare, with tons of ... View Post

Spinach Quiche

Spinach Quiche I have been wanting to make a quiche for a while now, and yesterday I found this really cute quiche pan so walah... here it is! I love quiche because it spices up the morning routine, it delivers a nice change. This recipe is delicious and has a lot of nutritional value--it's loaded with antioxidants and high quality protein. You can add extra veg if you'd like, this is what I had in the refrigerator. spinach, 1 package defrosted and squeezed 2 T fresh salsa 1/4 cup chopped onions 1/4 cup shredded carrots 1/4 cup plain yogurt 1/2 cup colby jack cheese 4 eggs freshly ground pepper Preheat oven to 325, and coat a quiche pan with cooking spray. Happy Valentine’s Day!

By Kristina LaRue, RDN 2 Comments

Chicken Pot Pie Eric had class until 9pm on Valentine's day, so we didn't plan anything special, or little did the other know :) When I got home from my internship on Monday, these gorgeous tulips and a sweet little note was left for me on our counter. I met him for a study date at Starbucks between classes. After coffee, I ran to Publix to grab a few items and then began cooking a special dinner. I made a simple yet wholesome chicken pot pie. Eric has been begging for angel food cake, so for dessert I did an angel food cake topped with fresh berries and whipped topping. Recipes below :) Enjoy! Heat vegetables and cream soup in sauce pan until veggies tender. Add spices to taste. ... View Post
