Creamy Crockpot Chicken & Wild Rice

I wanted to share a great opportunity to get some professional photos at an excellent rate. Rachel is an exceptionally talented photographer and a great friend of mine, and she is offering a Christmas mini session. I think this is a great idea, and would be tons of fun. Perfect for family photos, Christmas greeting cards, and gifts galore!

I love to come home from work with dinner already waiting on us. It makes it even better when it cooks itself.Creamy Crockpot Chicken & Wild Rice 

Makes about 8 bowls
 
1 large sweet onion, diced
1 cup matchstick carrots, roughly chopped
1 red sweet pepper, chopped
2 gloves garlic, chopped
2-3 chicken breast, whole
1 cup wild rice, uncooked
2 cans cream of mushroom soup
1-32oz box beef broth, low sodium
sprig of rosemary
2 bay leaves

garnish with a thin slice of lemon and rosemary

Throw all ingredients in crockpot and let simmer on low for about 6 hours. YUMMO! creamy and delicious.
