Skinny Pina Colada

By Kristina LaRue, RDN 4 Comments

This weekend has been calm. We have been so busy at work lately that rest and rejuvenation is what we were craving. Nothing that we had to do, except be together which was much needed after spending our 3 year anniversary in separate cities.

Memorial Day morning will be spent on the lake canoeing in Winter Park and then to off to my parents house for “southern cooking” as my dad describes it.
It’s going to be a HOT day here tomorrow and when the temp rises in the summer we LOVE a good pina colada. But after drinking one I’m often on a sugar high and feel a little icky. So I created a Skinny Pina Colada full of flavor that you can feel good about sipping! I hope you have a lovely Memorial Day. And if you need a few things to cook tomorrow, check out some of my festive recipes below.

What’s on your menu for Memorial Day?

Skinny Pina Coladas
makes 2-3 servings
3 cups frozen cubed pineapple
1/2 cup light coconut milk
1/2 cup coconut water
1/2 cup vanilla Greek yogurt (or low-fat vanilla frozen yogurt)
1/2 teaspoon vanilla extract
1/4 cup coconut rum
1 cup ice, add as needed
2 tablespoons flaked coconut, for topping
Place ingredients into blender, and pulse until smooth. If needed, slowly add ice and process until smooth. Pour pina colada into chilled glasses and top with coconut flakes if desired.

Note: If going Virgin or making a breakfast smoothie, sub in coconut water for the rum.

I've never been a big Pina Colada drinker, but I think it's because I've always been calorie-phobic of it ๐Ÿ™‚ This is definitely one worth bookmarking for future beach trips ๐Ÿ™‚

    Happy Memorial Day!
