Weekly Menu

It’s been a relaxing weekend at our house. Saturday I spent time writing at a coffee shop and then met up with family and friends in the afternoon.

It’s been raining since we woke up, but that hasn’t kept us inside. Eric and I enjoyed breakfast and scripture reading together then went on a long walk around the neighborhood, coffee in hand, and light drizzle outside. It was magical, the birds were really active and seemed to really be excited about the weather, too.
He went off to the library and I got to take a longer run in the rain, visit our new nephew, and then to the grocery store. 
Here’s what we are eating this week. 
Sunday: Spanish Wraps
Monday: Black-Eyed Pea Nachos
Tuesday: Baked Salmon w/ Quinoa Salad
Wednesday: Falafel Pitas 
Thursday: Roasted Shrimp w/ Veggie Couscous 
Friday: Grilled Chicken w/ Potatoes and Brussels Sprouts
Saturday: Roasted Tomato and Spinach Pizza
Now to some house cleaning, more writing, and getting ready for the week. Hope you had a lovely weekend! Do you like rainy weather too?
