Fastest Cinnamon Buns

Found this recipe on Pinterest the other day and was talking about it with the husband. Big mistake… he has been hinting at how “we” should make them for breakfast all weekend.

I guess today I woke up a little sweeter, and decided to give this recipe a whirl while Eric snoozed. As the rolls baked he began asking “what’s that smell?”. 
As soon as the timer went off, he hopped out of bed and started a pot of coffee. We’ll that’s an easy way to get him up! 
If you have a food processor, this recipe is pretty simple. It doesn’t take very long to make and bake, and you can’t beat the warm cinnamony smell that fills the house… 
I did make a few recipe adaptions. Mostly by using less sugar and butter; and halving the recipe since there is just two of us. 
Fastest Cinnamon Buns
adapted from finecooking.com 
makes 4 rolls
dough
1/4 cup + 2T cottage cheese
3 T buttermilk
2 T unsalted butter, melted
2 T sugar
1/2 tsp cinnamon
1/2 tsp vanilla extract
1 cup flour
1 1/2 tsp baking powder
1/4 tsp kosher salt
1/8 tsp baking soda
filling
1T unsalted butter, melted
1/4 cup brown sugar
sprinkle of cinnamon and pumpkin spice
1/3 cup chopped pecans
glaze
2 oz neufchatel cream cheese, softened
3 T powdered sugar
1 tsp vanilla extract
1 T milk
Heat oven to 400 degrees F, and grease 8 or 9 inch cake pan with cooking spray or butter.
In food processor, combine ingredients for dough and process until combined. Do not over mix; the dough will be very moist and soft.
Place dough on floured work surface, and knead about 4 times until uniform. Roll dough out into small rectangle. 
Brush dough with melted butter; sprinkle with rest of filling ingredients. Roll the dough up, and cut into equal pieces. Makes 4. Bake for 20 minutes.
In the meantime, mix up the glaze by combining all ingredients and whisking until smooth.

    I LOVE cinnamon rolls. This brings me back to the days when my mom wold make them out of the can on Sunday morning!

    Yum, nothing like the smell of cinnamon rolls baking!! I probably shouldn't tell my husband about this, he'll point out how easy it is and how it is already halved for our convenience! ๐Ÿ™‚
