I have been studying my days away lately, and like most students, I have found some ways to procrastinate. I was reading one of my favorite blogs,
Bella Eats, and she had a really great recipe for banana date bread. I have a few bags of dates in the pantry, thanks to my sweet friend, Tara Gidus, and have been looking for just the right recipe to use them. I love the smell of cinnamon and banana baking in the oven and the wholesome ingredients in the recipe, but I was a little skeptical that the bread would be dry since it didn’t have any butter or oil and was made with whole wheat flour. But boy was I wrong, this loaf is really moist! The dates, apples, and bananas give the bread the perfect texture and softness and provide natural sweetness. 

Eric gobbled up a few warm pieces right after it came out of the oven. I took some of it home to my parents house this weekend for them to try. They all thought it was delicious, including my picky little teenage bro and his friend– I didn’t tell them what was in it until after they tasted it 😉 
 
Have a slice for breakfast or snack with a smear of your favorite nut butter, or pair with a glass of milk or cup of yogurt. To me it makes a yummy coffee companion, especially after it has been warmed in the microwave and topped with a buttery spread.

Description

Banana Date Bread is perfect for breakfast or snacking! Made with whole wheat flour, dates, bananas, apples, and Greek Yogurt!


Ingredients

  • 2 very ripe bananas, mashed
  • 1/2 cup fat free, vanilla, Greek yogurt (All I had was blueberry flavor, and thats what I used)
  • 1/2 cup turbinado sugar
  • 1 egg
  • 1/2 cup peeled, chopped, tart apple
  • 6 medjool dates, chopped
  • 1-1/4 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/4 tsp nutmeg

Instructions

  1. Preheat oven to 350*F. Grease a 9×5 loaf pan.
  2. In a large bowl, combine the bananas, yogurt, sugar, egg, apple, and dates. 
  3. In a medium bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg.
  4. Add the dry ingredients to the wet and stir until just combined. Pour batter into prepared pan.  
  5. Bake for 45-55 minutes, until a toothpick inserted into center of bread comes clean. Cool in pan on rack for 10 minutes. Remove loaf from pan and cool on rack completely before slicing.
