Meatless Fajitas

It has been a while since I have posted. I have been going through many changes–it is just that phase of life that I am in. With finishing my internship, trying to find that first job, studying for the big RD exam, to my computer crashing, and getting oriented to my new computer–I got a MacBook 🙂 I am also doing some revamping of the blog and about to launch my website! I will keep you posted.

In the midst of all of these exciting new ventures, we have still of course been feeding ourselves–I intentionally document all the kitchen creations, but despite the best of intentions I have not been blogging about them. Here is a recipe I know you will enjoy–especially if you are like me and love Mexican food! Fajitas are weeknight must have..super simple and quick to prepare, with tons of great vegetables and protein it will be sure to leave you satisfied.

What I do is get out my cast iron skillet (If you don’t have one of these, I highly recommend it–you can get them very inexpensive–the one I have can be found at Williams and Sonoma, Target, etc or www.lodgemfg.com). I adore my cast iron skillet and it produces great results for many dishes, especially fajitas. If you don’t have one, simply use any skillet for the recipe. Heat the skillet over medium-high heat and put sliced onions and red peppers in the pan. Add a little canola oil if you need to. After the onions begin to look translucent, sprinkle a little bit of sugar to the pan; this aids in caramelization process. If you want to add chicken or steak (now is the time to do it)–or go meatless.

While the onions are caramelizing and making the house smell yummy, I work on dicing up the avocado and cilantro, and then drain and rinse the black beans.

The final step is to add the spinach to the pan and a pinch of kosher salt. Let the spinach wilt and then serve immediately. Enjoy!
