Cherry Almond Steel Cut Oats made in the Slow Cooker

I love the nutty and chewy texture of steel cut oats, just not how long it takes to cook. I don’t know about you, but I don’t have 30 minutes to stand in the kitchen stirring my oats in the morning.
But tossing them in the slow cooker and letting it cook while I’m getting my beauty rest makes perfect sense to me! It feels so good waking up to a warm breakfast in the morning. These Cherry Almond Steel Cut Oats are so yummy, especially when cherries are so fresh and juicy like you can find them in the supermarket right now!
I love to make this recipe on the weekend and store the oats in ball jars for grab and go breakfast during the week! Easy as {cherry} pie.

Ingredients

  • 1 cup steel cut oats
  • 2 cups vanilla almond milk
  • 2 cups water
  • 1/2 teaspoon almond extract
  • 4 tablespoons almond butter
  • 4 teaspoons chia seeds,
  • 4 teaspoons golden flax seeds
  • 4 teaspoons sliced almonds
  • 2 cups fresh sliced cherries

Instructions

  1. Coat slow cooker with cooking spray or butter.
  2. Place oats, almond milk, water, and almond extract in slow cooker, cover, and cook on low heat for 8 hours.
  3. Spoon warm oatmeal into 4 mason jars or bowls. Top with a spoonful of almond butter, chia seeds, golden flax seeds, sliced almonds, and sliced cherries.
  4. WARNING: Please don’t forget to coat the slow cooker with cooking spray! I’ve forgotten this little move one too many times and I’ve ended up with a sticky mess in the morning!

    I’ve had my crockpot for about 10 years & I just started to use cooking liner bags. I love them b/c of the lack of cleaning needed. I’ve never cooked oatmeal in my crockpot, so I wonder if I could use a liner bag? Or should I just endure my clean up & spray the hell out it w/ good ol can of Pam? Also, I have a 0.65 quart (Mini Crock) & a 6 quart crockpot, which size would you recommend for this recipe? I’m thinking I should use the larger size. Maybe I could cut the recipe in half, so I could use the Mini Crock.

    I’d appreciate any & all advice, you can give. Thanks!

      Hey Jackie! I’d say that you could do either of those two options– the liner would work great in the big pot and if you are using a mini do half the recipe (I’ve never used the mini before). Thanks for stopping by! Let me know how it works for you 🙂
