We are in a judgement free zone right? Welp, this might have been my lunch. I mean it counts as a healthy balanced lunch– healthy fats, lots of veggies, and carbs. Maybe I’m missing out on protein but it’s decently balanced enough to be a lunch.. so maybe I’m rationalizing, but at least it’s healthy, right?

This Greek 7 Layer Dip is loaded with only the good stuff-- roasted red pepper hummus and loads of veggies. Perfect appetizer to serve at any party.

I think this Greek 7 Layer Dip would also be awesome smeared in between two slices of whole grain bread with roasted chicken or turkey. Hello flavor explosion. Or ditch the bread all together and top this salty goodness over a bed of greens. Or I mean, eat it like you are supposed to with pita chips.

This dip would be perfect to serve at a cookout or picnic with friends. And it couldn’t be more simple to make– buy the veggies, chop them and layer it. Not much too the process but I’m telling ya, it’s seriously a crowd pleaser.

Ingredients

  • 8 ounces roasted red pepper hummus
  • 1/2 cup diced English cucumbers
  • 1/4 cup diced red onion
  • 1/2 cup diced artichoke hearts
  • 1 small tomato, diced
  • 1/4 cup feta cheese
  • 1/4 cup pitted kalamata olives, diced

Instructions

  1. Smear hummus on bottom of serving dish.
  2. Layer with cucumbers, red onion, artichokes, tomatoes, feta cheese, and olives.
  3. Serve with pita chips.
