Happy Birthday Eric + Our Disney Staycation

Happy St. Patty’s Day!! We had a big week last week which is one reason that I’ve been really quiet on the blog front. I have recipes made for you I just haven’t had time to sit down to edit the pictures and type up the recipes. Life can be exhausting sometimes, right?

Eric's Birthday

Last Wednesday was Eric’s birthday, so we celebrated with my parents that evening at Bonefish Grill and then spent the weekend on a staycation at the Fort Wilderness Lodge at Disney with Eric’s family.

Eric and I haven’t ever taken advantage of a little vacation at Disney before, I guess it comes with the territory because we live here, we often want to get away for a vacation. But Disney is like it’s own little bubble. We didn’t do the parks at all, just stayed at the resort and enjoyed the pool, pina coladas, and did lots of walking on their nature trails.

They had a beautiful stable with some of the biggest horses that I’ve ever seen… like we’re talking 2400 pounds. I didn’t know horses could be so massive and strong. WOW. Kinda cool too that Eric’s grandfather worked at that stable because he drove the horse and carriage at Disney for 18 years!

It was super relaxing and just what we needed. We thankfully have a good friend that stayed with Pearl while we were gone so we didn’t feel bad about leaving her because she got lots of love and attention.

I’m hoping I can get some major work done today and some more blog posts up. I’ll be back tomorrow with a little sweet recipe that I made to help celebrate Eric’s birthday!! Hope you all are doing well 🙂
