Island Mocktails

Some of my favorite memories of traveling as a family growing up were in the Virgin Islands. When I graduated eighth grade my parents took me on a vacation, just me and them.

They let each of us pick where we wanted to travel in the continental U.S. during the summer before high school. I chose the Virgin Islands.

When had an amazing time visiting The Baths, going on boat tours, snorkeling, and sitting on the beach as they served us drinks.

This was one of my favorite drinks, virgin of course. They make the best fruit smoothies all with local produce. They were so good that my dad would recreate them when we got home, to have a taste of the Islands.

We all went back another year as a family, and my dad would actually mix up a big batch of these drinks in the hotel room to save money. He used the “real stuff”, as he calls it, Coco Lopez. but I lightened mine up a bit!

Now you can grab a taste of the islands from home.. of course throw some rum in there if you’d like. We had these for breakfast this morning ๐Ÿ™‚

Island Mocktails
serves 2-3

1/2 cup pineapple
1 ripe mango
1 ripe plantain
1/2 cup light coconut milk
juice of 1/2 lime
2 cups ice

Blend all ingredients in blender until creamy.

    Since two of my grandkids are wonderful, handsome boys , whose heritage is Colombian, I have been introduced to the delish' mango. Didn't have those around the South back in the 50's and 60's.
    Such a beautiful, versatile fruit..
