Eric isn’t usually one for my creative sorts. Maybe it was that time I put tofu in the tacos or that other time I added anchovies in the salad dressing? He now begrudgingly asks “what’s the secret ingredient”. Then I roll my eyes and say just eat it. Maybe not the loving wife reaction you’d imagined?

We’ll my brother was over the other day and he is very adventurous and will almost try anything. I showed him these Nutella Protein Bites and he snags them and pops a few in his mouth, shouting how good they were and asking Eric if he’s tried them yet.

So I packed a few in his lunch box the next day. All the while knowing that my humble attempt at introducing him to the idea of tasting them was likely not going to go over well and I’d just find them in the bottom of his box later that night.

Eric is one of those selective eaters, especially at lunch time. He will eat all the foods that he likes first and then leaves the fruit, cottage cheese, or any other “peculiar” food as a last resort. Often resorting to the candy stash at their office. To my surprise, he came home from work that night saying that I needed to make those protein bites again….because they are so good. Do you have any eaters like this in your house??

In other news… Pearl is on the mend! She refused to wear the cone post-surgery but has done surprising well without it. Thank you for all of your well wishes and prayers.

Description

These little Nutella protein bites that have the right amount of sweet and crunch and whole ingredients that you can feel good about….all without turning on your oven. Fair warning, they’re slightly addicting.


Scale

Ingredients

  • 1 cup old fashioned dry oats
  • 1/2 cup natural peanut butter
  • 2 tablespoons Nutella
  • 1/4 cup vanilla protein powder, no sugar added
  • pinch of sea salt
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup semisweet mini chocolate chips

Instructions

  1. Place all ingredients into a large bowl, and mix together to incorporate.
  2. Form bites by rolling into 16 uniform round balls.
  3. Place in airtight container, and store in refrigerator until ready to eat.

    I think they sound great, definitely making these soon! Lucky for me, my husband pretty much will eat anything… the only food I have to really twist his arm to eat is asparagus and brussel sprouts. I’m still working on it though!

      Thanks Jess. It’s so weird because my husband is a foodie, but he’s skeptical of my shenanigans I guess. Eric is a BIG brussels sprouts fan, and swears the best way to eat them is roasted. I tend to agree 🙂 Have you tried that?

    These sound wonderful! My daughter is allergic to nuts – I can replace the peanut butter with sunbutter but what about the Nutella? Do I need it? And if I don’t, shld I alter any of the other ingredient amounts?

      Thanks Margaret! The sunbutter would work beautifully. Have you tried Biscoff spread? I love that stuff, and it would be a good substitute for the Nutella because it will still give it the sweetness and consistency.
