Guys, this recipe is one I’ve been so excited to share with you because…. creamy cashew butter meets cake batter goodness. I’m so pumped about this recipe for healthy protein balls. And I know how much you love birthday cake because these birthday cake pancakes are a reader fav… 

And I love this recipe because it’s super easy to make with only a few ingredients.

How to make no bake protein balls with protein powder: 

For this no bake protein power balls recipe, it’s best to use a food processor to get the mixture finely ground. You could also potentially use a blender if yours has a wide enough opening. I find that the food processor works best for spinning the protein ball mixture. 

Using the blade attachment of your food processor, pulse the dates until they are finely chopped. 

Then add in the rest of the ingredients for protein balls– cashew butter, flax, protein powder, coconut flour, and butter extract.

A note about protein powder…

The protein powder you choose has a big impact on the taste of these balls so opt for your favorite! Typically I use a vegan pea protein powder but in this recipe I chose to use vanilla whey because it has a sweeter taste. But you do you.

The secret to cake batter flavor?

If you want cake batter flavor, don’t skip the butter extract. 

Sure you can sub in PB or your favorite nut butter into this recipe but for the best cake batter flavor, I recommend cashew butter because it has a neutral taste. 

You don’t have to add sprinkles to the recipe but I think they make them fun, and more like birthday cake batter.

Cake Batter Protein Balls, a no bake protein ball recipe made with dates, cashew butter and protein powder.

Ingredients

  • 4 pitted delget dates
  • 1/2 cup creamy cashew butter
  • 1/4 cup ground flaxseed
  • 1/4 cup no added sugar vanilla protein powder
  • 1 tablespoon coconut flour
  • 1/2 teaspoon butter extract
  • pinch of salt
  • 1 tablespoon sprinkles

Instructions

  • In food processor, process dates until chopped.
  • Then add cashew butter, flaxseed, protein powder, and coconut flour and process until fully incorporated and crumbly.
  • Add butter extract and salt, and quickly process mixture one more time.
  • Remove blade from food processor and stir in sprinkles with spatula.
  • Place parchment paper on counter, and roll dough into 10 small balls; store in airtight container.

Notes

Depending on consistency of cashew butter and how juicy your dates are, you may need to add a splash of water or almond milk. Dough should be crumbly and stick together when rolled.

      I suppose you could use almond flour however I have not tested it with that. Alternatively, you could likely add an extra couple tablespoons of coconut flour. Again, haven’t tested but the coconut flour will absorb more liquid so would likely need less.
