Quinoa Veggie Burgers

Hey guys and girls. I’m tired. Do you get like that mid week? It seems to be a theme for me because by Thursday morning I’m just worn out and want to sleep in. My life right now just feels like busy season and I cannot catch up. If you know me or have read my blog long enough, you know I don’t thrive in busyness. It’s like this world and its madness is fighting against my true inner self. 
I’m trying to stay grounded, but I fail miserably every time and end up right were I am today. Exhausted, worn out, and lacking luster. 
I know myself enough that during the time of plenty is when I need to take care of myself more. To dig deeper and really cling to what I know soothes, centers and calms me—  massage, epson salt baths, hot tea, yoga, running, working out, eating fresh at home, coffee dates with girlfriends, reading, and prayer.
Today I met with a client that I’ve worked with for a long time and the energy she gave uplifted my spirit. I’m constantly surprised at how God gives me these precious moments. He meets me right where I am, amidst my crazy day to remind me that he is true to his promises, that I am His, and that I do not need to worry. Life is good.

Anyone out there in busy season? If so, how do you take care of yourself?
Quinoa Veggie Burger
makes 6 burgers
1 cup pinto beans
1 cup cooked quinoa
1 cup shredded carrots
1 shallot, minced
1 tablespoon low sodium soy sauce
1 egg
1/4 cup pumpkin seeds
1/4 cup whole golden flaxseed
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon sriracha 
pinch of freshly ground pepper
1 cup rice flour

In food processor or large bowl, process or smash beans until almost smooth, leaving it a little chunky. Pour pinto beans into large bowl, if using a food processor. Add quinoa, carrots, and shallot to bowl and mix together with beans until incorporated. Add egg, seeds and spices to bean mixture and stir until egg is incorporated. Stir in flour, taking care not to over mix. (Excessive mixing might make the burgers dry). Form bean mixture into 6 burger patties. Heat nonstick skillet over medium high heat and cook for 5 minutes on each side. If desired serve with whole grain bun, tomato, lettuce, sprouts, pickles, mayo, and ketchup.

    At the risk of sounding mellodramatic, I kinda feel like my life has felt that way since my 2nd child was born 🙂 Other than vacations away with no kids, I sort feel like I swim in a sea of chaos and fatigue 🙁 So I have no real pearls of wisdom, but I do send my biggest hugs your way for rest, relaxation and recharging 🙂

    I have been feeling similar! I am a person who thrives on quiet, downtime so I try to balance busy weekends with quiet ones at home.

      I'm the same way with our weekends. If we are away or working weekend after weekend… it doesn't feel good to me. I need that little quiet time– esp on Saturday mornings!

    Sounds like you take care of yourself in the right way when things get busy! I'd say my list would look similar – hot yoga, lots of fresh home-cooked food and a juice from Whole Foods.
