Salsa Verde

We like to joke that my brother, DJ, is half Mexican. He insanely loves the culture, the people, the language, the food. Like cannot get enough type of love. He’s not really half Mexican but just acts like it because he speaks Spanish every opportunity he gets and eats Mexican foods every.single.day. He even named is crazy dog Loco. No lie.
DJ moved to Orlando last year, so Eric and I have been spending a lot more time with him.. we’re trying to convince him to do a half marathon with us. He’s doing track and tempo runs with us but his goal is to break 20 min for the Orlando Corporate 5K. He is fast, so it pushes us. 
Last weekend we got together and made a delicious Mexican spread. Authentic enchiladas (coming soon), lime tortilla chips, and fresh salsa verde. DJ is known for his salsa and said I could share his salsa verde recipe with you all! If you like spicy fresh salsa this recipe is for you! It sure would make a great Super Bowl app too. Enjoy!
Salsa Verde
1 large jalapeño, remove stems {and some seeds depending on how spicy you like it, I like to use half seeds}
2 cloves garlic
1/2 red onion
28 ounce can tomatillos, drained well
2 teaspoons ground pepper
1 teaspoon kosher salt
2 teaspoons granulated sugar
juice 1 lime
2 cups fresh cilantro

In food processor or high powered blender, add jalapeño, garlic, and red onion and process until roughly chopped. Note: May need to make this recipe in 2 batches depending on how big your food processor is. Add tomatillos, salt, pepper, sugar, lime, and cilantro and process until completely chopped. Serve with tortilla chips.

    I love salsa verde but have actually never made it myself! Living in California we eat so, so much Mexican food and I couldn't be happier. It's so delicious and never boring! This salsa looks really easy and delicious, will try it out with canned tomatillos!

    This recipe sounds perfect. I never thought of using canned tomatillos, either. I love salsa verde, so I'm definitely going to have to try it out. I follow Rockin Robin's Cooking Mexican Recipes on YouTube. She suggests finely dicing the onions rather than processing if someone prefers a milder onion flavor. I've tried it both ways and now I dice them up by hand. It just seems like I can taste all the favors a little better, especially when the onion is a strong one. Thanks for sharing!

    I love salsa verde! My problem is finding the tomatillos, but I never thought to check for canned. Great tip!
