Harvest Salad with Creamy Pumpkin Balsamic Vinaigrette

Harvest Salad with Creamy Pumpkin Balsamic Vinaigrette

By Kristina LaRue, RDN 20 Comments

Home sweet home. It was a wonderful week in Lodi, California for the Almond Orchard experience. Thanks to California Almond Board I was reunited with many of my favorite RD bloggers and had the chance to meet new friends too. I’ll be sure to share more about what we learned there and the fun we had next week. For now, here is a picture of us at the orchard. I’m sure glad to be home with my babe and Pearl. I have a lot of catching up to do at work today but after that we have a fun Labor Day weekend in store.. very low key like we like it= CrossFit + Farmer’s Market + College Football Saturday. A little grilling and gardening too, and I plan to get our garden area ready for fall planting. Okay, so I’ve been really excited to share this salad recipe with you because #ohmygracious, it’s ... Healthy Tailgating Snacks

10 Tips for a Healthy Tailgate + RECIPES

By Kristina LaRue, RDN 11 Comments

Who's ready for some football?? I know someone in our house is beyond pumped for the first college football game of the year, and it's not the cat. My husband has been looking forward to the start of football season all year long. Can you relate? I love Auburn football, and I support my UCF team and after that, I'm done. He's picking me up from the airport tonight so he will be missing the first part of the game #truelove. I have ulterior motives for loving the start of football season--> FALL! When it's a game weekend aka every weekend from here on out, we make a festive dish and I go out and do my thing such as shopping, decorating our house, or gardening. I can hardly wait for Labor Day weekend to begin because I plan to do just that! For those of you that will be going to a ... View Post

Bacon Quinoa Chili

Flying to Cali + Bacon Quinoa Chili

By Kristina LaRue, RDN 8 Comments

I’m jet setting to California today, and writing from 10,000+ miles in the sky! I’m heading to an “Almond Orchard Experience” with California Almonds. Can I just say I’m beyond excited about the trip and I’m pretty sure they are totally pampering us while we are there. YAHOO!! Follow my IG feed for picture updates. Eric is a single parent this week. I’ll be gone for 4 days, and it will be one of the longest times I’ve been away from Pearl since we adopted her, so sad. Yesterday, I spent the day meal prepping and packing. We went out for a nice run in the morning and met up with our CFO friends to do a quick track workout. Eric has a big trial coming up and I know he’ll be busy, so I didn’t want him to be completely fending for himself since he’s use to home cooked meals. Here’s what I ... View Post

Beach & Birthdays

By Kristina LaRue, RDN 13 Comments

It was a weekend of birthdays. We spent the weekend in Indian Rocks Beach at Eric’s family beach house for Eric’s dad’s birthday. We headed out on Friday evening, it’s about 2.5 hours from Orlando. We got there just in time to go to bed. And woke up early enough for a cool morning on the beach with coffee and good reads. We loved the time with family and unwinding at the beach. Despite living in FL we don't make it to the beach very often.   Post by Dwight Pate. Post by Dwight Pate.   My mom, dad, and brother DJ got back from Honduras Friday afternoon. They went on a dental mission trip that my parents put together with their church. Post by Dwight Pate.   My dad did the dental work, mom assisted and sterilized equipment, and DJ was ... View Post

Dark Chocolate Cherry & Chia Bark

Dark Chocolate Cherry & Chia Bark

By Kristina LaRue, RDN 8 Comments

I've been snacking on this bark for a few weeks now.. it makes a lot! I took it to a dinner party last week and it was a smashing hit-- even with a 2 year old! The combo of tartness, crunch, sweet and salty rocks! This recipe is really simple to put together and calls for only 5 ingredients! Chocolate, chia, walnuts, cherries, and pumpkin seeds. I always seem to have these ingredients in the house but if you don't, feel free to sub in your favorite dried fruit and nuts. Don't worry, it's a healthy indulgence!   ... View Post

What is a superfood?

By Kristina LaRue, RDN 2 Comments

I had an interview first thing Monday morning on Fox 35 Orlando talking all about "Superfoods". FYI, I'm being very vulnerable right now by sharing this video with you. But first, two things... Why do I take on a southern accent when I'm on TV? And why do I always make the craziest faces? See what I'm talking about here: FOX 35 News Orlando. Be back tomorrow with a yummy recipe! ...
