Happy #MealPrepMonday! We had another low key weekend which gives me lots of time to go grocery shopping and prep our meals during the week. Yesterday I prepped our veggies for omelets, egg bowls and salads... and made this yummy pasta bake for lunches. While I love salads for lunch (especially tuna!!), Eric requests a hearty lunch meal. He voted for Jasmine rice + veggies and chicken meatballs and I also made him this pasta bake so that he could have a few options. I didn't realize how much of a kale-aholic I was until I started writing this post and looking though all the recipes that have kale listed as an ingredient. I know, some of you are probably like WTH is kale? I boast of kale's goodness almost daily. Aside from it being a down right fun food to eat... it's a superfood in my book and here's why. I've almost been protesting making a stop in because people around here are going nuts about it, I mean so crazy there was a cop sitting in the parking lot opening weekend directing traffic. Happy Friday! We have another RELAXING weekend in store! Heck yes. Tomorrow we plan to do a little CrossFit in the morning and instead of the Mobility & Mimosas after the 8am WOD it's Mimosas & Moving. CrossFit Orlando is moving down the road and they need a few extra hands to transport equipment. The new box will be much closer to our house, about 1.5 miles away, so Eric and I are talking about running there when it opens up next week! Happy Friday! I love the feeling I get waking up on Friday morning, something about it excites me that I'm one day closer to spending two full days with my love. We are keeping it low key this weekend. Nothing on the books which makes me happy! Because it's Friday, here's a look into a few of my favorite things this week. Lindsay Letters. I'm a recent fan of her art. My friend Layne has many beautiful scripture pieces in her house and she let me in on where she found it. Lindsay has so many cute things on her site.
