Pad Thai

'Twas a long ride on the interstate back to Orlando. At first we thought it was Christmas traffic and people traveling back home...but the jams were backed up at the mall and outlet exits. No surprise, but it was insane!When we finally made it back, I headed straight to the grocery and E stayed behind and unpacked the car. I planned our menu this afternoon. I had extra firm tofu in the fridge from last week, and when I found this Pad Thai recipe on cookinglight.com, I new just how I was gonna use it.It was really delicious with just enough spice and tang. The noodles were so creamy. I subbed in lo-mein noodles since my grocery store was out of wide rice noodles, and cashews for peanuts.Topped with cilantro and lime...the lime is were it's at, completing the flavors. Christmas Day

Teddy finally got his toy! He has been very anxious about getting his "squeak squeak" when he found out it was in his stocking. We opened presents with my family in the morning, and then made a breakfast feast. I prepped the Christmas Strata the night before. It was super! Sauteed onions, red peppers, green peppers, turnip greens, mushrooms, zucchini, cheddar and feta cheese, eggs, milk, and french baguette. We also made belgium waffles and topped them with fresh raspberries. Delish! Dad and I got cameras this year. Mine is a Canon EOS Rebel t3, and it takes awesome pics. It's my first dslr ;) It came with the standard lens, and I ordered a 50mm lens which should be in on Thursday. Yay for food photos with edge blur and a clear picture. Veggie Couscous

We made a vegetable couscous this week. It was super tasty and challenged our usual fare. I'm always looking for ways to make our meals in a different way, and this recipe did the trick. It cooked up some extras which was perfect for lunches.Vegetable CouscousServes: 6 bowls1 large yellow onion, dicedyellow bell pepper, chopped3 large carrots, chopped1 zucchini, chopped1 cup mushrooms, chopped1 large potato, diced2-3 cups kale1 large tomato, diced1 can chickpeas2 tsp cumin1 tsp cayenne1 tsp cinnamonseason with kosher salt3 cups couscous, preparedlemon, wedgescooking waterCook veggies and spices in dutch oven, adding water as needed until vegetables are tender. It’s looking a lot like Christmas :)

We are getting ready for Christmas around here. I've decorated our "mantel", set out the santa dishes, and put on the Christmas quilt.. which is actually more cuddly than our standard. I love Christmas. Last weekend we found our tree. Even though it took us a while to decorate it, we wanted it to be a relaxing experience so we waited until we found the time. We put on a holiday classic and sipped on some eggnog.  We were able to find a skinny tree to fit into a small nook in the living room. Spiced Syrup & Weekly Menu

As soon as woke up this morning, I was charged up to run. This wasn't planned, but I rolled with it. I laced up my shoes and was out the door. It was beautiful out, nice and crisp, and I even got to wear long sleeves!! Stephen and Rachel invited us over to their house for breakfast this morning. Stephen cooked up some belgium pumpkin waffles. Rachel made a killer Triple Cinnamon Syrup. I am totally a fan, and do not think I will be purchasing the store bought stuff anymore. Love these plates, she got them from Crate and Barrel. Rachel always has everything just so. I love spending time with these guys. We sipped on hot tea, coffee, and freshly squeezed OJ. Crunchy Quinoa Granola

Quinoa, an ancient whole grain, is so light and fluffy, but it's actually what makes this granola extra crunchy! It is very versatile and it cooks so fast! I really like adding it to soups and salads. Crunchy Quinoa GranolaMakes 5 cups3 cups rolled oats1 cup pecans1/3 cup pumpkin seeds1/3 cup ground flax seeds1/3 cup quinoa, pre-rinsed1/3 cup poppy seed1 tsp coarse grain salt1/3 cup unsweetened flaked coconut1/2 tsp ground cinnamon1/4 tsp ground nutmeg1/8 tsp ground cloves1/4 tsp ginger (I used freshly grated)1/3 cup dark brown sugar1/3 cup canola oil1/3 cup 100% pure maple syrup1 Tbsp molasses1 tsp vanilla extractHeat oven to 300 degrees F.
