Breakfast Flatbread Pizza

Last Sunday, Eric and I had breakfast at 903 Mills Market, a very quaint local restaurant in the neighborhood where we use to live. When I dine out I always ask the person taking my order their favorite item on the menu. I like to hear what others enjoy, and it’s usually is a winner of a choice. Eric gets jealous when this happens because my food tastes better than his.

 
I had pizza for breakfast, and I’m not talking the cold pizza leftovers! Their breakfast pizza rocked my socks and I was wearing sandals! It totally inspired me to create my own at home. Duh!

I’m so into eggs at breakfast.. they are savory and a great breakfast protein, but I have to be honest sometimes eggs and toast or fruit can get really routine and boring. The breakfast pizza is a egg-cellent way to spice up the typical breakfast routine.

So here it is: The Breakfast Flatbread Pizza! Crispy, cheesy, eggy, with the perfect amount of vegetables and of course bacon! You’re family we be praising you and love that they get to eat pizza for breakfast.

Breakfast Flatbread Pizza

Ingredients

  • 1 pita flatbread
  • 1 teaspoon 1/3 reduced fat cream cheese
  • 2 eggs
  • 1 slice center-cut bacon
  • 1 tablespoon diced red onion
  • 1 tablespoon diced bell pepper
  • 1 mushroom, sliced
  • 1 tablespoon diced tomatoes
  • 1 tablespoon shredded cheddar cheese
  • 1/2 teaspoon chopped chives

Instructions

  1. Heat oven to 400 degrees F. Line baking sheet with foil and cook bacon for 7 minutes. Blot grease and allow to cool, then slice.
  2. Scramble eggs but don’t cook all the way through. They need to be moist because they’ll finish cooking in the oven.
  3. Place flatbread on baking sheet and spread with cream cheese. Top evenly with eggs, bacon, onion, pepper, mushrooms, tomatoes and cheddar cheese.
  4. Bake in 400 degree F oven for 8 minutes until flatbread is crispy and cheese is melted. Sprinkle with chives and slice into for triangles while hot.

    i make this often, especially when we have guest for breakfast. It is always a hit! I was reviewing the recipe this morning and found myself confused about the bacon instructions. Usually it takes about 20 minutes to cook bacon at 400; is your intention that the bacon be undercooked before it goes onto the pizzas?

      Thanks!! Yes– I want the bacon to be a bit undercooked because it will continue to cook in the oven on top of the flatbread. What a great bfast for guests 🙂

    Yum! This is definitely my kind of breakfast. Now the trick is just to convince my French boyfriend that there are so many great breakfast foods besides cookies, jam, and pain au chocolat…might take a while!

    Mmmm. I bet the cream cheese gets all melty! Yum. I will be making these for the family this weekend. I agree eggs and toast can get pretty routine. But I love the way eggs fill me up till lunch. This will be perfect.

      I feel the best energy when I eat eggs in the morning. And yeah, the cream cheese does get melty and helps the ingredients to stick 🙂 Hope the kids like pizza for breakfast!
