Kale Pesto

There are so many ways to make pesto. It’s a mixture of herbs, garlic, nuts, parmesan, and olive oil. Traditional pesto is made with basil, pine nuts, parmesan cheese, and olive oil. But the unique combinations can be left up to your imagination. 

Pesto can be spread on warm garlic bread, into a panini, stuffed into meatballs, or mixed into a pasta. I had some kale in the fridge that needed to be put to use, so I decided to blend it up into a pesto. 
Just so you know, this recipe is a precursor for a recipe coming on Friday. But it deserved it’s own recipe. So get out the food processor and go make this pesto to gear up for a delicious weekend! 
What’s your favorite way to use pesto?

Kale Pesto
makes 1 cup
4 large cloves garlic
1/4 cup raw walnut halves
2 1/2 cups packed kale leaves
1/8 teaspoon kosher salt
1/4 cup grated parmigiano reggiano 
3 tablespoons extra virgin olive oil
In bowl of a food processor with blade attachment, process garlic until chopped. Add walnuts and process until chopped. Add kale, salt, and cheese to food processor and pulse until incorporated. Pour in olive oil and process until combined. Store in an airtight container in refrigerator or freeze in ice cube trays for longer storage.

Nutrition Facts per tablespoon: 50 calories, 4.5g fat, 1g saturated fat, 0mg cholesterol, 45mg sodium, 2g carbohydrate, 0g fiber, 0g sugar, 1g protein, 35% vitamin A, 20% vitamin C, 4% calcium, 2% iron

    Girl, your pictures are incredible lately. I've been trying to take mine from a different angle so that they are more vertical, so they can be bigger on my site and pin better, but its difficult to turn and shoot the camera vertically. I'm assuming that's what you're doing right? Also, is that the new staging board that you made and painted? It looks fabulous. I need to so do that but I'm not very handy.
    I can't believe I haven't made kale pesto yet! I mean I make everything else kale, but not pesto, so I'm definitely going to have to do that soon. I can't wait to see what you're topping this on tomorrow ๐Ÿ™‚ xoxo, Jackie

      Thank you Jackie, that is a big compliment coming from you! Yes it's vertical, and I've also shooting vertically makes it easier to submit to photo sharing sites. I painted 3 boards but kinda like this one the best… I think I may have to create this board in different colors to have variety! It's really really simple! I hope to one day get around to putting a blog up about the boards… but until then email me if you want to discuss. ๐Ÿ™‚

    Pesto is always made here in our house and I love to freeze it and use it when I am in a pickle for a dinner idea. Kale pesto is something I have not done yet, but great idea. Cilantro pesto I have done and a parsley pesto. This is a must on my next “pesto” recipe list ๐Ÿ™‚
