Pulled Chicken Avocado Sliders

Remember last week when I was complaining about my steps and being office bound and sedentary? Sitting sucks. Well this weekend we blew that out of the water (27,000 steps), and it’s getting me excited about the week ahead! 

On Saturday, I went into work with the Magic because they had practice. And when I got home my hubby was deep cleaning our house. He’s such a sweetie and ever since my cat allergies have been really great too! Thanks honey! That afternoon we did a little budgeting, meal planning, and grocery shopping.
Sunday we got up I did some photography and took a long walk around the neighborhood, coffee in hand. It was a foggy morning and 70 degrees. I loved running into Victoria, RunningPeanut.com, who was out on her morning long run. 
After church, Eric and I set out for a long run. We ran all around downtown, our old stomping grounds. We enjoyed reminiscing the miles we use to log over there when we lived in that tiny bungalow apartment.

We had planned on running 6-8 miles depending on how we felt, and my goal was to hold onto 9 min/mile for the run. I was pretty proud of myself because I was able to push through the first 6 miles at a 9 min pace. Then my legs were shot.. I slowly walked/jogged the last two miles to our house. It was a little painful, and hot out… in the 80s!

Workouts on tap for this week: 
M: 45 min Weights
T: Track 6 X 800m repeats @ 10K minus 50 sec pace
W: 45 min Weights + Long AM Walk
R: 3 mile tempo run @ 10K pace
F: 45 min Weights
S: 10 mile Run
We are actually planning on checking out a local CrossFit gym this week so one of the weight workouts will hopefully be a CrossFit workout. I’ll keep you posted on how that goes.

Pulled Chicken Avocado Sliders
serves 4
1 tablespoon coconut oil
2 large vidalia onions, thinly sliced
1 pound chicken breast, cooked and shredded
1 tablespoon taco seasoning
1 teaspoon minced garlic
1/4 cup chicken broth
2 medium avocados, smashed
8 slider buns
pinch of salt and pepper

In large cast iron skillet, heat coconut oil over medium low heat. Place onions in pan and sauté slowly until caramelized, about 35 minutes. Season onions with lightly with salt and pepper. In large bowl, place shredded chicken, taco seasonings, garlic and chicken broth in a bowl and mix until incorporated. Assemble the sliders by spreading avocado on one side of bun, and layer chicken and onions on bun. Serve with fresh fruit and green bean fries.

    Sounds like a perfect weekend! My husband and I used to live in Winter Park and that picture of the street with all of the trees took me back! I miss living there! These chicken sliders sound delish!!

    Wow! Sounds like a great sunday and those landscape photos are absolutely beautiful, kinda jealous and want to live where you do!

    On a side note, these sandwiches sound divine. Love the avocado addition girl! 🙂

    The weekend was great as we cheered on the Seattle Seahawks for victory 🙂 I love your recipe, I also do one very similar and made it for the party we hosted…I pretty much “wing it” for workouts…I am attending daily Pure Barre classes and have been slacking on picking up my running again {which bums me out as I need more cardio}

      I'm sure you did have a great weekend! Congrats!! I've never tried a Barre class but I'm going to be joining forces with our local Barre studio to do nutrition talks. I hear it's a FUN workout. I'm all about enjoying fitness!

    Yum! The sliders sound awesome! And I'm totally jealous of your 80 degree weather! I've been missing running outside. I think you've posted before about using Jawbone and was wondering how you liked it? I'm trying to decide between that and a fit bit at the moment.

      Thanks girl! Yep, I use JawboneUp and love it because it keeps me honest and helps me to find ways to move throughout the day. I'm honestly not familiar with all the intricacies of the FitBit but from what I gather they are relatively similar.
