Chocolate Peanut Butter Rocky Road Cookies

Merry Christmas Eve! I don’t know about you, but I can’t believe Christmas is tomorrow. This season has been weird this year. We put our tree up pretty late, I barely did any gift shopping, only picking up a few things here and there.

But even with the rushed holiday, we did get together with neighbors and friends for Christmas parties, hosting a Christmas gathering at our house and I baked lots of festive cookies for friends. We sat by our glowing Christmas tree every morning for quite space and coffee. And today, I get the day off.

This season I’ve been reminded about a lot of really cool things. Even during this busy time, God is teaching me about being still enough to listen and reflect. With the death of our pastor, I’ve been reminded even more this year why Christ came to this earth. Not for the birth, but the resurrection. Not to live a safe life on earth, but to conquer death. For us, so that we can do the same. Because He is light that came into the darkness. For this we can be joyful, and for this we celebrate Christmas.

If you still have some holiday baking to do… whip up these cookies filled with chocolate peanut butter, marshmallows, chocolate chips, and walnuts. Santa won’t be disappointed. 😉

Chocolate Peanut Butter Rocky Road Cookies
makes 24 cookies
1/4 cup unsalted butter, softened
1/4 cup chocolate peanut butter
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup mini marshmallows
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1 cup + 2 tablespoons all-purpose or whole wheat pastry flour
3/4 cup dark chocolate chips
3/4 cup chopped walnuts
Preheat oven to 375 degrees F; line baking sheet with parchment paper. In bowl of stand mixer beat butter, peanut butter, and sugars together using paddle attachment. Whip in the marshmallows until they begin to incorporate in the mixture, they will still be lumpy. Add egg, vanilla, salt, and baking soda and mix together. Slowly add flour to the mixer and mix just until incorporated. Stir in the chocolate chips and walnuts. Drop cookies onto baking sheet and bake 10 minutes. Allow to cool for two minutes and transfer to drying rack to cool completely. Store in airtight container.

    Good evening,

    I happened upon this wonderful cookie-Chocolate Peanut Butter Rocky Road Cookies . The ingredients calls for chocolate peanut butter. I have not seen that before. I live in California, where can I find it. Thanks! cant wait to make these.
